Three Nights in Culinary Paradise: The Maldives Edition

Three exclusive evenings bring together French culinary artistry, Mediterranean influences and the flavours of the Indian Ocean in celebration of InterContinental’s 80th anniversary.
This November, the Maldives will become the setting for an extraordinary culinary encounter as InterContinental celebrates eight decades of luxury hospitality with an exclusive gastronomic collaboration. From 18 to 20 November 2026, InterContinental Maldives Maamunagau Resort will welcome the culinary team of Michelin-starred La Maison 1888 from InterContinental Danang Sun Peninsula Resort in Vietnam for a three-night dining experience at its signature restaurant, The Lighthouse.
Set against the endless turquoise waters of Raa Atoll, the collaboration brings together two distinctive culinary worlds: the sophisticated French techniques of La Maison 1888, Central Vietnam’s only one-Michelin-star restaurant, and the Mediterranean-inspired, seafood-focused cuisine of The Lighthouse. The result promises an intimate celebration of exceptional ingredients, creative expression and the art of fine dining.
Two Destinations,
One Culinary Vision
At the heart of this unique experience are two accomplished chefs, each bringing a distinct perspective to the table.
Chef Arun Sivasankaran, Executive Chef of InterContinental Maldives Maamunagau Resort, draws on more than two decades of experience in luxury hotels and island destinations. His philosophy centres on the natural character of ingredients, precise techniques and the distinctive flavours of his surroundings.
Joining him is Jean-Louis Angulo, Chef de Cuisine at La Maison 1888, whose classical French culinary expertise has been shaped by experience in some of the world's most prestigious hotels. Together, the chefs will create a limited-edition menu that bridges continents, combining French gastronomic traditions with the freshness and vibrancy of the Indian Ocean.
The collaboration is more than a meeting of culinary styles. It reflects a growing appreciation for destination dining, where gastronomy becomes an essential part of the travel experience, connecting guests to different cultures through flavour, creativity and craftsmanship.

Dining Above the
Indian Ocean
The setting is as remarkable as the culinary experience itself. Perched above the water, The Lighthouse offers panoramic 360-degree views across the Indian Ocean, creating an atmosphere where natural beauty and understated elegance come together.
Over three evenings, guests will discover a carefully composed menu highlighting premium seasonal ingredients, refined techniques and imaginative pairings. Ocean-inspired flavours will meet French precision and Mediterranean influences, transforming each dinner into a journey between the Maldives and Vietnam.
With only three nights available, the experience is designed to offer the intimacy and exclusivity increasingly sought by discerning luxury travellers.
Celebrating Eight Decades of Exceptional Hospitality
The special dinner series also marks a significant milestone for InterContinental Hotels & Resorts, which celebrates its 80th anniversary in 2026.
“This exciting collaboration is a celebration of the InterContinental spirit: bringing cultures, people and experiences together in beautiful destinations. We are delighted to welcome the team from InterContinental Danang Sun Peninsula Resort to The Lighthouse, to create an experience that reflects the elegance of both resorts and the culinary ambition our guests seek when they travel,” says Reinhold Johann, General Manager of InterContinental Maldives Maamunagau Resort.
Located in the secluded Raa Atoll, just 35 minutes by seaplane from Velana International Airport, InterContinental Maldives Maamunagau Resort combines barefoot island luxury with sophisticated hospitality. Its collection of beach, lagoon and overwater villas, curated wellness experiences and exceptional dining destinations makes it an idyllic escape for travellers seeking both tranquillity and discovery.
For three evenings this November, however, the spotlight will belong to gastronomy — proving that some of the most memorable journeys are experienced not only through the places we visit, but through the flavours we discover along the way.
The exclusive four-hands dining series takes place on 18, 19 and 20 November 2026

An Island Sanctuary of
Exceptional Luxury
Nestled within the turquoise waters of the Raa Atoll, just a 35-minute seaplane journey from Malé’s Velana International Airport, InterContinental Maldives Maamunagau Resort embodies the art of refined island living. Surrounded by pristine white-sand beaches, lush tropical landscapes and the endless blue of the Indian Ocean, this exclusive retreat offers a world where understated elegance meets extraordinary natural beauty.
The resort’s collection of sophisticated Beach, Lagoon and Overwater Villas, alongside six expansive private Residences, combines contemporary Maldivian design with an exceptional sense of privacy. Each villa features its own private pool, creating an intimate sanctuary where indoor and outdoor living blend effortlessly.

Beyond its exceptional accommodation, the resort invites guests to discover a carefully curated world of experiences. Seven distinctive restaurants and bars celebrate flavours from around the globe, while the overwater AVI Spa offers restorative wellness rituals inspired by the surrounding ocean. For those seeking complete tranquillity, The Retreat, an exclusive adults-only enclave nestled within the lagoon, provides a secluded haven of relaxation.

Equally captivating is the resort’s connection to the natural world. Set beside a remarkable marine ecosystem, Maamunagau Lagoon serves as an important habitat for juvenile manta rays. Through its partnership with the Manta Trust, the resort supports marine conservation while offering guests the rare opportunity to encounter these magnificent creatures in their natural environment.
Balancing barefoot sophistication with impeccable hospitality, InterContinental Maldives Maamunagau Resort is more than a tropical escape. It is a destination where privacy, discovery and the quiet beauty of island life come together in an effortlessly luxurious experience.
